A light, creamy and refreshing smoked aubergine dip to add as a side dish for every meal or enrich any sandwich.
INGREDIENTS
400 g | Aubergines 50 g | Tahini (see the type in the products list on home page) 60 g | Lemon juice 2 cloves | Garlic To taste | Salt
PREPARATION
Roast the aubergines on live fire (use stove or barbecue) until soft on all sides, then allow to cool. Scoop out the flesh and mash it with a fork until the texture is smooth with small pieces. Grate the garlic and then add the rest of the ingredients and mix well. If the color is dense and/or texture is not soft then add warm water until you get the required look and feel. Taste and correct if necessary.
PRESENTATION
Spread on a small plate, enough quantity to cover the plate and decorate with pomegranate seeds (optional) then drizzle olive oil and enjoy.
